And then there was my one squash. A big one, but not enough for a dish by itself. So I’m making pizza. I have no idea where the idea came from originally. It’s definitely pretty detailed so probably from a source like Cook’s Illustrated or America’s Test Kitchen.
You can definitely use your own pizza dough, but sometimes it’s ok to buy dough at the grocery store. It definitely saves time. But is it as tasty?

If you’d like to turn those green beans into dinner, try this recipe from adapted from seriouseats.com. It calls for button mushrooms but if you can get to a farmers market this weekend I hope you can find some local mushrooms to use instead.

A box like this week’s has me thinking “shakshuka.” (With the most tomatoes in one box that I think I’ve seen all year.) And I’m amazed to see I’ve never posted a recipe for this versatile dish – baked eggs cooked in a spicy tomato sauce. So look below for a recipe adapted from one at from feelgoodfoodie.net. This one is actually pretty basic – so add hot pepper flakes or other forms of heat as your household prefers.
(2019) Butternut Enchilada Casserole
Last week I turned all those turnip greens and the big head of bok choy into Creamed Greens. It was so simple and that large slow cooker full of greens cooked down with no attention from me, taking about two hours to go from shredded greens to luscious. It was a hit during the dinner party I gave Friday and then leftovers topped baked potatoes the following day for an easy dinner. It put me in the mood for other slow cooker dishes – and I’m sharing this enchilada casserole recipe. It’s got canned enchilada sauce and, yes, boxed corn muffin mix. Don’t judge. But feel free to substitute your own favorite recipe for corn bread as the topping. It’s been a big hit every time I’ve served it.

And I’m going to head to East Atlanta Farmers Market tomorrow to pick up some apples. I need a bunch for an apple pie recipe I need to test – and the two apples in this week’s box are not enough. So instead, I offer you one of those Cook’s Illustrated recipes so it’s very detailed. But delicious! And only needs two apples.

Looks like the box also held the first sweet potato of the season. And a white sweet potato at that. There recipes posted at https://grassfedcow.com/ingredient/sweet-potatoes/ that might be appealing. I thought I had shared a recipe for a cold sweet potato salad with curry seasoning, but I’m not seeing it there. I’ll have to find it when I get home. In the meantime, here’s a salad to consider – it combines sweet potatoes and red potatoes. The quantities of potatoes don’t matter. And the dressing is really good.
