(2019) Sauteed Kale that’s Actually Good

One of a friend’s faves, originally from the NYTimes.

Ingredients:

1/4 c olive oil 3 cloves sliced garlic 1 large bunch kale, stemmed, leaves coarsely chopped 1/2 cup stock, white wine or water salt, papper, red papper flakes 2 T red wine vinegar

Preparation:

Heat olive oil til it shimmers, add garlic and cook til it’s soft.
Add kale to pan, turn heat to high, and add stock. Use a big spoon to toss greens in oil and stock, then cover and cook for 5-7 minutes, til it’s soft and wilted but still very green. Remove cover and continue to cook, stirring occasionally until all the liquid had evaporated, maybe 1-2 more mins. Add salt and peppers, add vinegar, toss and serve!
