Teri Watson shares this Southern comfort food recipe, a favorite at her house.
Ingredients:
4 strips bacon 1 onion 2 cups okra
Preparation:
Sauté four strips of bacon until crisp; set aside. Using reserved bacon grease, cook one chopped yellow medium onion and cut up okra (usually two cups or more if desired) until done. Season to taste with kosher salt and freshly ground pepper. An option is to use Kirkland’s Organic Salt Substitute instead of salt.
Meanwhile, in separate pot, cook one cup of rice or orzo in 2 cups of water or chicken broth. Combine cooked okra and onions with the orzo or rice, add crumbled up bacon, and combine.
Serve warm. Recipe easily doubles!
