The summer lull has arrived, that weird and wonderful intersection of summer and fall veg as the summer crops tail off while the fall crops are just starting in. This is the time each year when harvests are lighter. We know it’s coming. From a value standpoint, the lighter boxes during this time are compensated by the packed-full boxes that we deliver at the peak of each season’s harvest.
We had been hoping to include field peas in this week’s box. Unfortunately, we didn’t have the labor needed to harvest. So many challenges in farming. Rain has turned the tomatoes into water balloons. Coming to the rescue: sweet corn! It’s been a long time since we’ve had a late-season corn harvest. Happily, it’s here this week. Enjoy.
This week’s acorn squash is accompanied by a kabocha squash. The kabocha is sweet and dense when roasted, inspiring comparisons to sweet potatoes. It’s a happy substitute for butternut squash in any recipe – we have dozens of butternut squash recipes on our site, including Spiced Lentil Salad with Butternut Squash. Salad of the Week, indeed.
I’m in a mind to make corn budin with the sweet corn this week. This cake is served as a side to main dishes in Mexico, though you could also push it into the sweet category with a topping of late-season fruit. Peaches, perhaps? Personally, I love serving this as a special side dish with chunks of pork roast.
