Broccoli Home Fries

Tender sweet broccoli should be an easy sell, but if there are reluctant broccoli eaters at your house, try adding them to that perennial favorite – homefries. Use all olive oil if you prefer. Or use the onions and garlic scapes from the box if you wish. This recipe could accommodate most anything. What doesn’t go with potatoes?

Ingredients:

1 pound broccoli 1 tablespoon olive oil 2 large potatoes, peeled and cut into 1/2-inch cubes 1 tablespoon butter Salt and pepper

Preparation:

Peel broccoli stalks and cut into ¼-inch thick slices. Cut florets into bite-size pieces. Steam broccoli until just tender, 2 to 3 minutes. You can do this on top of the stove, or in the microwave.

Heat oil in large skillet over medium-high heat. Add potatoes. Cook, stirring occasionally, until potatoes are crisp, golden and cooked through, about 15 minutes. Add butter (or olive oil) and broccoli to skillet, season to taste with salt and pepper. Heat until broccoli just begins to brown.

Serves 4.
