Asian Butternut Squash Casserole

Butternut squash is a great sponge for Asian flavors.

Ingredients:

1 butternut squash, peeled, seeded and cut into 1-inch cubes 1 onion, chopped 1 cup coconut milk 1 ½ teaspoons (or more) curry powder 1 teaspoon salt ½ teaspoon pepper

Preparation:

In a large saucepan, combine squash cubes, onion, coconut milk, curry, salt and pepper. Stir to combine, then cover tightly and cook over medium heat until squash has steamed tender, stirring occasionally, about 20 minutes.
