Have we talked about combining tomato and watermelon in a salad before? Fabulous. Add some feta or goat cheese or little mozzarella balls if you like. Basil? Yum.
Ingredients:
2 cups cherry tomatoes 2 cups cubed watermelon, seeded 2 tablespoons fresh lemon juice 4 teaspoons olive oil Salt and pepper Cheese or basil, if you wish.
Preparation:
Put all this together in a big salad bowl, toss, taste for seasoning and serve. You can let it sit for a little bit but it’s at its peak at the moment it’s tossed together. But confession – I love this kind of salad the next day when the tomato and melon juices have leached from the fruits and mixed with the lemon and olive oil – I could just drink that combined juice in a glass.
