I loved that they’re still serving tomato water. It was the chef’s darling a year or two ago and has sort of disappeared. I had my doubts when I first heard of it, but it’s actually really delicious.

Preparation:
Puree some of your tomatoes in a blender and then put the puree in a strainer and allow it to drain into a bowl or pitcher. Refrigerate the water that drips out and you have a really refreshing summer drink. Don’t discard the pulp in the strainer. Throw it in the freezer for your winter spaghetti sauces.
