Adapted from a recipe from Trader Joe’s, if you can believe it.
Ingredients:
2 cups cooked quinoa 1 cup shredded squash 1 cup cottage cheese 1 cup panko 1/2 cup shredded mozzarella 3 eggs 3 tablespoons whole wheat flour 1/4 cup chopped onion 1 head garlic (yes, the whole head, but you can cut this back), cloves peeled and minced 1 teaspoon cumin Salt and pepper 3 tablespoons olive oil
Preparation:
This recipe could not be easier. In a large bowl, mix everything except olive oil together. Taste for seasoning. (To be food safe, you should sauté a tablespoon until thoroughly heated through before doing your tasting.) Make 10 patties and refrigerate to help them firm up. You can do this a day ahead of time.
When ready to serve, heat the olive oil in a skillet, and sauté patties until brown on both sides, about 4 minutes per side. Make sure patties are heated all the way through to cook the eggs. Serve as a sandwich or not. Up to you!
