In the fall, don’t forget about making applesauce – the world’s simplest recipe. Wash your apples, quarter them and cut out the core. Toss them into a large saucepan – as many as you’d like. Add about a 1/4 cup of water, just to keep them from burning until they start to exude their juice. Now bring them to a simmer and cook until the apples are tender. Puree the sauce in a blender, or with your immersion blender (the best, the easiest way). Taste. Does it need sugar? Does it need a little lemon? Do you want cinnamon or some other apple pie spice in there? Season to taste, simmer until it reaches the consistency you want, and you’re done.
