A quick recipe from Prevention magazine.
Ingredients:
1/2 cup coarsely chopped fresh basil leaves 1/2 cup coarsely chopped fresh parsley 1/2 cup sliced almonds, toasted plus additional for garnish 1 large clove garlic, put through garlic press 1/3 cup extra virgin olive oil Salt and pepper 1 pound green beans, trimmed
Preparation:
In the bowl of a food processor, combine basil, parsley, almonds, garlic and olive oil. Pulse until finely chopped. Season to taste with salt and pepper.
Blanch green beans in boiling salted water or steam until just tender, about 4 minutes.
Top green beans with pesto and garnish with additional almonds just before serving.
