Fiery Green Beans

Southern Living came up with this variation on “regular” roasted or sauteed green beans. Delicious.

Ingredients:

1 pound green beans, trimmed 2 tablespoons olive oil 1 green onion, thinly sliced 2 tablespoons fresh lemon juice 1 tablespoon chopped flat-leaf parsley 1 teaspoon chopped fresh cilantro 1 teaspoon dried red pepper flakes Salt and pepper

Preparation:

Preheat oven to 375 degrees. Lightly grease a rimmed baking sheet.

Arrange green beans on prepared baking sheet. Drizzle with olive oil. Bake 10 minutes. Increase temperature to broil and broil until browned in spots and crisp-tender, about 5 minutes.

While beans are roasting, in a small bowl, stir together green onion, lemon juice, parsley, cilantro and red pepper flakes. Season to taste. Drizzle over beans. Serve hot or chilled.
