A quick and easy way to cook those green beans, courtesy of Prevention magazine.
Ingredients:
2 tablespoons canola or peanut oil 1 pound whole green beans, trimmed 2 large cloves garlic, minced 1/8-1/4 teaspoon red-pepper flakes
Preparation:
Place large, deep skillet or wok over medium heat. After about 2 minutes, add oil and swirl to coat pan.
Raise heat to high and wait about 30 seconds. Add green beans and season with salt to taste. Cook 3 minutes, shaking pan and/or using tongs to turn and move beans so they cook quickly and evenly. Carefully taste beans (may be crunchy) and cook until desired doneness.
Season with garlic and red-pepper flakes to taste. Cook 1 minute longer. Serve hot, warm, or at room temperature.
