As long as potatoes keep showing up in our box, I keep thinking of ways to enjoy them.
This recipe is like the best way to use those pretty potatoes – simple and then you season them however you wish. They really are irresistible.
Ingredients:
All your little potatoes Some olive oil Salt and pepper A bunch of your favorite herbal seasoning mix like za’atar or Spike or some wonderful Hispanic mix you’ve got in the pantry
Preparation:
Heat the oven to 425 degrees.
In a large saucepan, cover the potatoes with water by 1 inch. Bring water to a boil, then reduce heat and simmer potatoes until tender. Drain and spread on a baking sheet. Lightly press them to flatten and drizzle with olive oil. Bake until crisp. Remove from oven and sprinkle with salt, pepper and your seasoning mix.
Done.
