Chinese (Napa) Cabbage Salad

Ingredients:

4 tablespoons apple cider vinegar 3 tablespoons granulated sugar 1 tablespoon sesame oil 1 teaspoon ginger 1 apple, cut into julienne pieces or grated 1 medium head Chinese (Napa) cabbage, finely shredded 1/3 cup golden raisins 1/3 cup minced onion 2 tablespoons chopped fresh cilantro or other herb 1 tablespoon toasted sesame seeds or sliced almonds

Preparation:

In a small bowl, combine vinegar, sugar, sesame oil and ginger. Stir until sugar dissolves. Add apple and stir to combine.

In a large bowl, combine cabbage, raisins, onion and herb. Pour apple dressing over cabbage and toss. Add sesame seeds or almonds and serve immediately, or refrigerate overnight.
