Sorry, no idea where I found this recipe, but it’s simple and delicious. I love the combination of sausage, apples and a blue cheese. Great for a quick weeknight dinner.
Ingredients:
6 ounces rigatoni (about 2 cups) 1/2 pound smoked sausage, halved lengthwise and cut into 1-inch pieces 1 1/2 pounds apples, cored and cut into 1/2-inch-thick slices 1/2 cup whipping cream 1/2 cup crumbled Gorgonzola cheese or other blue cheese Fresh herbs (optional)
Preparation:
Cook pasta according to package directions. When done, drain and keep warm.
In a large saucepan, cook sausage until lightly browned, then add apples and cook 5 minutes or until apples are just turning golden. Stir in the pasta, cream and cheese. Heat through and serve.
