(2017) Sweet Potato and Greens Stir Fry

This is adapted from another recipe from Paolo. She used bok choy in her recipe, and we’ve adapted it for what’s in today’s box. I haven’t tried all the peppers to see if any are slightly hot. Maybe you still have a jalapeno from weeks past?

Ingredients:

Oil, for stir-frying Sweet potato, cut into 1/2-inch pieces 1 clove garlic, minced 1 medium onion, cut into 1/2-inch pieces 1/2 a medium-sized hot pepper Soy sauce Thai sweet chili sauce Part of your bunch of turnip greens, roughly chopped Choice of noodles (rice, soba, or spiralized veggies), cooked

Preparation:

Heat wok or pan over medium heat and add oil. Cook sweet potatoes and garlic 5 minutes, stirring constantly. Add onion, hot pepper and soy sauce and Thai sweet chili sauce, to taste. Cook 5 minutes. Add greens and cook to desired level of doneness. Serve over noodles with additional soy and sweet chili sauce.
