Yes, melons make great smoothies. Or soup. Try this one both ways.
Ingredients:
4 cups cut-up melon 2 tablespoons lemon juice 2 tablespoons lime juice 1 tablespoon snipped fresh mint 1 tablespoon honey 1/4 teaspoon ground ginger Plain Greek yogurt (for soup)
Preparation:
In a blender or food processor combine watermelon, lemon juice, lime juice, snipped mint, honey, and ginger. Cover and blend or process until nearly smooth. Cover and chill for 2 to 4 hours.
To serve as soup, ladle soup into bowls. Top each serving with a spoonful of yogurt.
