This recipe was submitted by CSA subscriber Silvia Medrano-Edelstein, the chef instructor and founder of Word of Mouth Cooking Club specializing in kid’s gourmet meal-kit prepping camps and specialty events like kiddie mocktails and gingerbread houses. Her recipes don’t include exact measurements, but you can figure it out.
Ingredients:
sushi rice rice vinegar nori wrappers green beans rice flour egg panko mayonaise sriracha
Preparation:
Add “enough” seasoned rice wine vinegar to hot cooked sushi rice. Cool off. Spread on nori wrapper. Lay blanched green beans. Roll up. Set up a breading station: rice flour, beaten egg, gluten-free panko. Roll around thoroughly in each one before proceeding to next. Fry in shallow pan. Slice. Serve with mayo shiracha, pickled ginger and yuzu soy.
