Are you a fan of shrubs? We are crazy about them at my house. This apple shrub recipes came from allrecipes.com. A friend on Orcas Island where they have more fruit trees per household than any other place I’ve been swears by this recipe to help use up the bounty from her backyard apple tree. Extra delicious with local ginger, of course.
Ingredients:
2 tart apples, cored and shredded 2/3 cup unfiltered apple cider vinegar 1/2 cup granulated sugar 2 teaspoons grated fresh ginger Vodka or spiced rum - or club soda or seltzer
Preparation:
Put apple in a jar and add vinegar, sugar and ginger. Close jar tightly and shake well. Let it sit on the counter until the sugar dissolves, shaking occasionally. Then refrigerate for 5 days.
Strain syrup into another jar and discard shreds. Syrup will keep, refrigerated, up to 2 weeks.
Mix 1 part syrup with 4 parts seltzer or soda, or 1 part alcohol, 2 parts syrup, 8 parts seltzer for cocktails.
