Ingredients:
2 large apples, cored and roughly chopped 1/2 cup apple cider 1 tablespoon cinnamon 1/2 cup whole wheat flour 2 tablespoons granulated sugar 3 1/2 teaspoon baking powder 1 teaspoon salt 1 1/4 cup milk 1 egg 3 tablespoons melted butter or oil Coconut oil, for panfrying
Preparation:
In a medium saucepan, combine apples, cider and cinnamon and cook over medium heat until mixture absorbs all the liquid. Remove from heat and set aside.
In a large bowl, whisk together flour, sugar, baking powder and salt. Stir in milk, egg and butter or oil. Whisk until smooth.
Heat a skillet over high heat and add enough coconut oil to coat the bottom of the pan. Pour pancake batter into skillet to make the size pancakes you prefer. When the uncooked surface is full of bubbles, flip the pancakes. Cook 2 more minutes, then remove from heat and serve.
