2020 Produce CSA Week 25

Conne’s vacation continues this week. Here’s my take on this week’s box.

Another great week! This is week 25 of the 2020 CSA. Just love the fall veggies. Many of them keep for so long. Daunted by the butternut squash?  They’ll last for months in a cool corner of your kitchen. Same with the sweet potatoes.

This week I received a white sweet potato that weighed nearly 3 lbs. I’m visualizing a mix of purple, orange, and white sweet potatoes for a colorful Thanksgiving side dish, if they don’t get used before then.

Here’s my favorite sweet recipe, courtesy of a PeachDish recipe adapted from April McGreger’s Savor the South. Though PeachDish, the prepared meal service, is gone, I’m grateful to have their simple recipe cards still in hand!

Candied Sweet Potatoes

20 oz sweet potatoes, peeled and cut into 1/2″ slices
2-3 tablespoons butter
1/2 cup sugar
2 oz water
2 teaspoons cider vinegar

Layer the sliced sweet potatoes in a large, cast iron skillet. Dot with butter, then sprinkle with sugar and salt.

Pour in water and vinegar, cover skillet with a tight-fitting lid or foil. Simmer for 15 minutes, or until potatoes are tender enough to be pierced with a fork.

Remove the lid or foil. Every 10 minutes, baste the sweet potatoes with the syrup, but be careful not to break them up. Simmer until the sweet potatoes are very tender, and the sauce is thick, 30-35 minutes more.

Yield: 4 servings
Prep time: 20 minutes
Cook time: 45 minutes

I’m happy to see more greens in the box. Some folks got the mild turnip greens (the flat leaves) and some received mustard greens (the tender, crinkled leaves). This week, we’ll try the Twice-Baked Green Potatoes recipe that Conne provided in 2017. Sounds like a kid-friendly preparation, because, cheese. Recipes featuring sliced potatoes is apparently this week’s theme.

Apples Update:  We haven’t yet made the Apple Pecan Blondies, due to not having any pecans. It’s time to go for a walk in the neighborhood and find 1 cup on the ground somewhere!
