(2017) Tomato and Squash Gratin

This simple recipe can be enhanced by slicing up some of those green onions and sprinkling them between the layers.

Ingredients:

All your tomatoes, thinly sliced Salt and pepper, to taste All your squash, thinly sliced lengthwise Olive oil Fresh basil leaves 1/2 cup grated Parmesan cheese 1/2 cup bread crumbs

Preparation:

Preheat oven to 400 degrees and lightly grease a 9-by-13-inch baking dish.
Layer some tomatoes, sprinkle with salt and pepper. Add some basil leaves and drizzle with olive oil. Layer squash, sprinkle with salt and pepper. Add more olive oil, spinkle with Parmesan. Repeat until you’ve used all the vegetables. Top with bread crumbs and drizzle with more oil. Bake, covered, about 20 minutes or until squash is tender, then uncover and bake until crumbs are golden brown.
