Thai-Style Long Beans with Pork

Long beans are my very favorite green beans. Make this dish with any Thai curry paste your household prefers.

Ingredients:

2 teaspoons vegetable oil 1/4 cup curry paste 1 pound long beans, ends trimmed, cut into 3-inch pieces 1 (1-pound) pork tenderloin, trimmed, cut on diagonal into 1/4-inch thick slices 1 tablespoon fish sauce, or as desired 1 teaspoon light brown sugar, or as desired

Preparation:

In a large skillet, heat oil over high heat until very hot. Add curry paste and immediately begin stirring. Add long beans and toss with paste, stirring constantly until beans are just tender, about 3 minutes. Remove beans from skillet. Reduce heat to medium-high and add pork tenderloin slices. Cook pork slices until brown on each side, about 1 minute per side. Return beans to skillet; add fish sauce and brown sugar as desired. Toss together and serve immediately over brown rice.
