Southern Pickled Kale

Pine Street Market entered this dish in the 2012 Market Mashup at the Peachtree Road Farmers Market. It’s sort of fun that it doesn’t include any of their own ingredients.

Ingredients:

2 cups water 2 cups apple cider vinegar 1/4 cup kosher salt 1/4 cup dark brown sugar 2 tablespoons hot sauce 2 tablespoons Worcestershire sauce 4 cloves garlic, peeled and halved 1 sprig rosemary 1 sprig thyme 1 large bunch kale, stems removed, sliced into thin ribbons

Preparation:

In a large saucepan, combine water, vinegar, salt, brown sugar, hot sauce, Worcestershire sauce, garlic, rosemary and thyme. Bring to a boil. Turn off the heat. Remove the rosemary and thyme and add the kale. Stir until kale wilts into the liquid. Cool to room temperature, then transfer to a glass jar and refrigerate. Will keep up to 2 months.
