Potatoes with Smoked Paprika

Recipe Author: Conne Ward Cameron

This week I’ve been reading “Cooking for Mr. Latte” by Amanda Hesser, former food editor of the New York Times. All this week’s recipes come from that book – a lovely combination of memoir and cookbook.

Ingredients:

1 1/2 pounds potatoes, cut into 1 1/2-inch cubes 2 tablespoons olive oil Sea salt 1 tablespoon smoked paprika Preheat oven to 350 degrees.

Preparation:

In a large bowl, toss potatoes with olive oil, season with salt and sprinkle with paprika. Toss again and move the potatoes to a roasting pan. Roast until potatoes are soft and creamy inside, about 40 minutes, stirring occasionally. Taste for seasoning adding more salt and paprika if needed.
