Pickled Garlic

What can you do with pickled garlic? Use it as an antipasto or chop it into pasta salads. The pickling brine can be used in your next vinaigrette.

Ingredients:

1 1/2 cups white vinegar 1/2 cup granulated sugar 1/2 teaspoon kosher salt 3 cups garlic cloves Want spicy garlic? Add 1, 2 or 3 dried red chiles Want more bite? Add whole black peppercorns, crushed red pepper or mustard seeds

Preparation:

In a 1-quart glass measuring cup or microwave-proof bowl, combine vinegar, sugar and salt. Put in microwave for one minute. Carefully remove, stir to make sure sugar and salt are dissolved. Pack garlic into jars and carefully fill jars with vinegar mixture. Allow jars to cool and then refrigerate. Will keep for several months.
