Ingredients:

4 8-inch pitas, split in half 2 large tomatoes 1 large bell pepper 1 large onion 1 bunch parsley 8 ounces ground lamb or beef 1/4 cup olive oil Paprika powder Ground cumin Ground black pepper Salt Red chili flakes Lemon wedges

Preparation:

Preheat oven to 425 degrees.

In the bowl of a food processor, combine tomatoes, pepper, onion, and parsley and process to reach the consistency of a thin sauce.

Place this mixture in a mixing bowl with the ground meat, olive oil, paprika, cumin, pepper, and salt. Manually mix until all ingredients are integrated. The mix should be slightly moist. Since you’re adding seasoning to taste, start with just a little and sauté a teaspoon full of the meat mixture. Taste – adjust seasoning – sauté again – until you find a spice level that pleases you.

Divide meat mixture between 8 pita halves and arrange on a baking sheet. Bake until just crisp and topping is sizzling. Sprinkle with red chili flakes and serve with lemon wedges.
