Crowder peas! Yum. Before I give you a formal recipe, let me just say that my favorite way to fix crowder peas is so simple, and involves those green beans in today’s box as well. Trim and break up the green beans and toss them and the crowder peas in lightly salted water. Boil until the peas are tender. Sometimes I throw in some cubed potatoes. Drain. Eat. That’s it. Simple, delicious. And because you’ve cooked it with no fat of any sort, you can eat them warm or you can cool them and eat them in mixed green salads, or turn them into a salad, like the one below. I love it when we have both field peas and green beans in the box.
