Eddie Hernandez’ Sweet Oven-Roasted Beets

Ingredients:

4 tablespoons sugar 1 tablespoon salt 2 pounds peeled beets, stems removed 1/2 stick of butter Lime wedges and salt for garnish

Preparation:

Mix sugar and salt. Place beets on a sheet of aluminum foil. Spread butter on top, sprinkle with salt and sugar mixture. Wrap and bake for 45 minutes. Remove from oven, slice, and serve with lime wedges and salt.
