Cabbage and Apple Salad for Thanksgiving

This recipe came from Bon Appetit no telling how long ago. An easy, easy salad and a nice green addition to your Thanksgiving table.

Ingredients:

1/2 teaspoon caraway seeds 1/2 head cabbage, quartered, core removed, thinly sliced 2 apples, cored, cut into matchsticks 1 cup torn greens – kale, mustard, collard, whatever you have on hand – tear into bite-size pieces 2 tablespoons fresh lemon juice 2 tablespoons olive oil Salt and pepper

Preparation:

In a small dry skillet, toast caraway seeds over medium heat until fragrant, about 1 minute. Let cool. In a large bowl, toss cabbage, apple, kale and caraway seeds. Dress with lemon juice and olive oil. Season to taste.
