Apple Pecan Blondies

This old-school recipe came from Family Circle magazine. Old school it may be, but really delicious.

Ingredients:

1 cup pecans, divided 3/4 cup granulated sugar 3/4 cup packed light brown sugar 1 stick unsalted butter, melted 2 eggs 1 teaspoon vanilla extract 2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 2 chopped apples 1 8-ounce package cream cheese 1 cup powdered sugar 2 tablespoons maple syrup

Preparation:

Preheat oven to 350 degrees. Lightly grease a 12-cup muffin tin.

Arrange pecans on a rimmed baking sheet and toast 10 minutes. Cool slightly and chop. Set aside.

In a large bowl, combine granulated sugar and light brown sugar. Add butter, eggs and vanilla. Whisk in flour, baking powder and salt. Stir in chopped apples and 3/4 cup chopped nuts. Divide batter between muffin cups. Bake 30 minutes or until a toothpick inserted in center comes out clean. Cool completely.

While blondies are cooling, make glaze: in a medium bowl, stir together cream cheese and powdered sugar. Add maple syrup and stir in chopped nuts. Frost each muffin with glaze.
