No idea where this recipe came from, but I am more and more in love with dried fruit in salads. With the nutty flavors of Parmesan? Yum.
1 bunch kale, stems removed, very thinly sliced Juice of 1 lemon 1/4 cup extra virgin olive oil 1/4 cup dried cranberries 1/2 cup grated Parmesan Salt and pepper
In a large serving bowl, combine kale, lemon juice, olive oil, cranberries and Parmesan. Toss thoroughly to combine, and allow to rest 5-10 minutes. Toss thoroughly again before serving, adding more cheese, salt or pepper, if desired.
