(2017) Broccoli, Peanut and Fruit Salad

That head of broccoli is so sweet. Don’t cook it! Serve it raw in something like this salad.


1/4 cup white wine vinegar 3 tablespoons canola oil 3 tablespoons peanut butter 1 tablespoon low-sodium soy sauce Your head of broccoli, trimmed and cut into small florets, stem roughly chopped 1/4 cup dried fruit – your choice – raisins? dried cranberries? dates? chopped figs? 1/4 cup chopped peanuts – again your choice – dry roasted? roasted with salt? raw?


Make dressing: in a small bowl, whisk together vinegar, oil, peanut butter and soy sauce. Taste for seasoning and adjust as needed.

In a large bowl, combine broccoli, dried fruit and peanuts. Add dressing and toss. Can be served immediately or it’s also delicious after one or two days. You’ll wish you had more broccoli!
